Serves 6
Ingredients
1 cup almonds
⅓ cup extra virgin olive oil
¼ cup white vinegar
2 cloves garlic, crushed
1 tablespoon The Avo Tree Honey
½ cup chopped fresh dill
½ cup chopped fresh mint
Sea salt
Cracked pepper
1 cucumber, cut into 3cm chunks
1 ½ avocados, cut into 3cm chunks
Heat the oven to 180ºC regular bake.
Place the almonds on a baking tray and bake for 8 minutes. Set aside to cool then roughly chop.
In a bowl, whisk together the olive oil, vinegar, garlic, honey, dill and mint together. Season with salt and pepper.
Add the cucumber, avocado and chopped almonds to the bowl and fold through. Transfer to a serving bowl.
