Breakfast Burrito

Cheesy Tray Baked Omelette
1 red onion, sliced
1 red capsicum, core and seeds removed and sliced
½ green capsicum, core and seeds removed and sliced
100g chorizo sausage, cubed
1 teaspoon cumin seeds
1 tablespoon olive oil
6 size 7 eggs
100ml cream
1 cup loosely packed grated edam or cheddar cheese
⅔ cup tinned black beans, drained
Sea salt
Cracked pepper

Salsa
3 vine tomatoes
¼ red onion, finely chopped
½ cup roughly chopped fresh coriander
