Chocolate Walnut Fudge

Chocolate. Walnut. Fudge. Three things great on their own and even better together! This vegetarian (almost vegan if you dont count the honey!) fudge is a perfect natural sugar alternative for all you sweet tooths. With added protein and a crunch of walnuts it will be a hit in the lunchbox or with some vanilla ice-cream at dessert time!

Ingredients:
1 cup walnuts, toasted + roughly chopped
Flesh of 1 avocado
10 dried figs, softened in boiling water
1 tbsp + 1 tsp honey
1 tsp vanilla bean paste
2 tbsp coconut oil, melted
3 tbsp cacao powder
½ tsp ground ginger
½ tsp ground cinnamon
Pinch sea salt

Chocolate Walnut Fudge

Method

Line a loaf tin with baking paper. Set aside.

Place the toasted walnuts in a pan and heat over medium heat. Add 1 tbsp honey, allow to melt and stir to evenly coat the walnuts in honey. Remove from the heat.

In a blender, add the avocado, figs, 1 tsp honey, vanilla, coconut oil, cacao, ginger, cinnamon + salt. Blend until a smooth mixture is formed.

Add the roughly chopped walnuts to the chocolate mix and evenly stir through.

Pour mixture into the lined tin. Place in the freezer to set, then cut into pieces.
