Spiced Corn Ribs W Avocado Mayo

New Zealand Corn is considered a kiwi favorite and for good reason! Most of us hang out for corn season and often there isn’t a meal which goes past without it featuring on the table. This spiced corn ribs with avocado mayo recipe is exciting and delicious and we can’t stop going back for more. The spices on the corn are balanced perfectly with the freshness of the avo mayo and we highly recommend the maple glaze as the sweetness is the perfect finishing touch!

Ingredients:
The corn ribs:
2 sweet corns on cob
1 tsp smoked paprika
1 tsp oregano
1/2 tsp chili powder (optional)
1/2 tsp ground onion powder
1/2 tsp ground garlic powder
1 tbsp olive oil
S & P to season

The avocado mayo:
1 avocado
1/2 cup Greek style yogurt
1 medium-sized lemon, juiced
S & P to taste

The maple glaze (optional):
1 tbsp olive oil
1 tbsp maple syrup
