Method
Rim
On a small plate, combine the sugar, salt and tajin. Rim a tumbler with one of the lime wedges then dip it into the salt mixture. Fill the glass with ice and set aside.
Cocktail
In a cocktail shaker, muddle together the avocado, lime juice and pickled jalapeños until the consistency is pulpy.
Add the cointreau, tequila and simple syrup then fill with ice. Shake vigorously until the shaker becomes frosty.
Using a strainer and small sieve, double strain the mixture and pour into the tumbler.
Serve topped with a few wedges of lime.
