Watermelon, Avocado & Mint Salad

Start your summer with this fresh, mouth watering salad. With exciting flavors and textures it is sure to be a hit! With the creaminess of the avocado and feta mixed with the fresh crunch of watermelon and cucumber and the added salty crunch of the sourdough! Just divine!

Serves 6

Ingredients
3 slices sourdough
1 tablespoon olive oil
600g watermelon, cut into cubes
⅔ cucumber, cut into cubes
2 avocados, cut into cubes
½ small red onion, thinly sliced
200g goat’s feta cheese, cubed
⅓ cup fresh mint leaves

Dressing
¼ cup olive oil
2 tablespoons lemon juice
1 teaspoon runny honey
Sea salt
Cracked pepper

Method

Method

Heat the oven to 180ºC regular bake and line an oven tray with baking paper. 

Tear the sourdough into bite sized pieces and drizzle over olive oil and sea salt. Bake for 7-10 minutes or until golden. 

In a jar, shake together the dressing ingredients until it emulsifies. 

In a serving bowl, toss together the watermelon, cucumber, avocado and red onion. Top with feta, mint and torn sourdough, then drizzle over the dressing.
