Heat the oven to 180ºC regular bake and line an oven tray with baking paper.
Tear the sourdough into bite sized pieces and drizzle over olive oil and sea salt. Bake for 7-10 minutes or until golden.
In a jar, shake together the dressing ingredients until it emulsifies.
In a serving bowl, toss together the watermelon, cucumber, avocado and red onion. Top with feta, mint and torn sourdough, then drizzle over the dressing.
