We love when sweet corn season comes around! And it aligns perfectly with peak avo season. This salad is the perfect combo of sweet, creamy and zesty. Whether its for lunch or a dinner side salad you’ll get a bit of everything with this yummy raw creation.
1 cup brown rice
4 cobs sweetcorn, steamed/boiled, kernels removed
1 red onion, diced
Large handful fresh mixed herbs (coriander, basil, mint, parsley)
Pinch of chilli flakes
¼ cup extra virgin olive oil
1 tbsp tamari
Juice + zest of 2 lemons
2 avocados, cubed
Cracked Black Pepper
Cook your grain of choice, according to the packet instructions. Set aside to cool.
Place cooled grain and corn kernels in a bowl. Add the remaining ingredients and toss together. Season salad with sea salt and ground black pepper.
Serve straight away, or cover and refrigerate until ready to serve.
