Super Fresh Veggie Nachos

If you’re a fan of nachos and enjoy fresh, vibrant toppings, this dish is a great choice!

Serves 4: Cook time 20 mins

Ingredients
1 can black beans
2 cloves of garlic, crushed
1⁄4 tsp cayenne pepper,
1⁄2 tsp smoked paprika
1⁄4 tsp salt
1 avocado
1⁄2 cup finely chopped pineapple (or tinned crushed pineapple)
10 cherry tomatoes (approx 1⁄2 cup)
1x large red chilli
1⁄2 cup corn
large handful fresh coriander, finely chopped
1 sprig of mint
1x juice of one lime
1⁄2 cup finely chopped red onion

1 bag of Corn chips
Sour cream to serve

Super Fresh Veggie Nachos

Method

Add a glug of olive oil into a frying pan. Add rinsed and drained black beans, crushed garlic cloves, cayenne pepper, paprika and salt. Fry for 3-4 mins. Set aside.

Finely chop all veggies and herbs. Add into one large bowl, squeeze lime juice all over and lightly toss together.

Onto a large serving plate add the black beans. Pile the fresh veggie salsa over the beans. Top with sour cream, extra coriander and lime wedges. Arrange corn chips around the outside.

Serve straight away.
