Peanut Brownie Avocado Biscuits

Peanuts. Brownie. Avocado. Biscuits. Well, there are a few things you don’t often see in one sentence. These deliciously moreish bikkies are bound to satisfy your sweet treat craving while being packed with energy and raw goodness to boot. Whip them up for the kids lunch or freeze them to have as a back up choc fix!

Ingredients:
1 ripe avocado, mashed with a fork
½ cup coconut sugar
Flax ‘egg’ (1 tbsp ground flax + 3 tbsp water)
1 tsp vanilla bean paste or extract
½ cup cacao powder
⅓ cup oat flour
½ tsp baking soda
Pinch Salt
¼ cup roasted peanuts, roughly chopped
50g dark chocolate, roughly chopped

 

Peanut Brownie Avocado Biscuits

Method

Preheat the oven to 180C Bake.

In a blender add the avocado, coconut sugar, flax ‘egg’, vanilla, cacao powder, oat flour, baking soda + salt.  Blitz to combine. Pour mix into a bowl.

Add the roasted peanuts + chocolate chunks. Mix until well combined through the mix.

Get 1-2 baking trays out and line with baking paper. Using a tablespoon, add one heaping spoon full of dough onto the lined baking tray. Flatten the top a bit with the back of a fork.

Place in the oven and bake for 8-10mins, or until the edges + top have set. Don’t be tempted to overbake or they won’t be fudgy.

Remove and allow to cool, before storing them in an airtight container in your fridge.
