Ingredients
Olive Oil Chocolate Mousse
1 avocado
150g dark chocolate – melted
1/4 cup extra virgin olive oil
1/4 cup coconut cream
¼ cup maple syrup
1/2 tsp sea salt
To Serve
4 tbsp extra virgin olive oil
1 tsp sea salt
For the mousse, add everything to a blender and blend until you have a thick, smooth mousse. Pour into an airtight container and place in the fridge for at least 2 hours to set.
To serve, add a generous scoop of mousse into each bowl. Create a ‘well’ in the middle and drizzle with 1 tbsp of extra virgin olive oil and a pinch of sea salt. Serve immediately.
Leftovers will keep in an airtight container in the fridge for up to 7 days.
Simple Swaps / Additions
– We use 80% dark chocolate.
– Use milk chocolate if you prefer a less rich mousse
– Swap extra virgin olive oil or melted coconut oil
– Swap coconut cream for dairy cream.
– Swap maple syrup for honey.
– We love serving with fresh berries and chopped toasted hazelnuts. Stewed fruit is also delicious, try rhubarb, apricot or nectarine.
