In a screw top jar, mix together all of the dressing ingredients, shake well to emulsify, then set aside.
Arrange fennel, rocket, nectarine, avocado and shallots in a serving bowl. Just before serving, drizzle over the dressing and top with blobs of marinated goats cheese, chives and pistachios.
