Matcha Avocado Icecreams

Try these refreshing delights this summer for a homemade plant based treat. These Matcha Avocado Icecreams are a crowd pleaser – they look amazing and taste even better!

Makes 6
Prep time: 5 minutes
Freezing time: 4 hours + 10 minutes

Ingredients:
2 avocados ripe, peeled and stone removed
1 1/2 cup coconut milk
1/4 cup maple syrup
1 tbsp matcha powder
1 tsp vanilla essence
1/2 cup dark chocolate, melted
¼ cup pistachios, crushed

Method:
Blend together avocado, coconut milk, maple syrup and matcha powder until smooth liquid forms. Add a little water if mixture is too thick.

Pour mixture into ice block moulds. Place in freezer to set for four hours.

Once set, dip each ice block into melted chocolate to cover 1/3 of the surface area. Sprinkle with crushed pistachios. Place back in freezer for 10 minutes to set chocolate, then serve.
