Jazzy Mexican Guacamole

Wanting to add a little extra to your normally pretty standard guacamole recipe? Why not incorporate things like corn, pumpkin seed, sesame seed & lime zest. Not only do the flavours make you feel like you’re in a Mexican bar, but the textures add a new level of enjoyment to your corn chip, taco or burrito. You will notice that we used a new variety of avocado for this guac; The Reed. It gives it a new depth of flavour that will tickle everyone’s fancy. Buttery, rich and smooth goodness. Enjoy it with corn chips or in tacos!

Ingredients:
4 Avocados
1⁄2 red onion
1 tomato
200g canned corn (in spring water, no added salt)
Juice & zest of 1 lime
3 tbsp pumpkin seed
2 tbsp sesame seed
Handful of coriander
Salt & pepper to taste
1 tsp olive oil

Jazzy Mexican Guacamole

Method

Firstly, chop the veggies; Dice the tomato & remove watery seed. Finely chop the red onion & coriander. Drain corn & set aside.

Halve avocados – Remove the seed & skin and add to a large bowl. Lightly mash avocado with a fork, making sure to leave it chunky.

Add lime zest/juice, olive oil, salt & pepper. Stir again.

Add chopped veg, corn and seeds to the bowl and stir through. Making sure to leave it CHUNKY. Garnish with sesame seed & coriander.
