Serves 4 as a main
Ingredients
Hoisin Pork
2 tablespoons neutral oil, such as canola or vegetable
1 red onion, finely diced
1 red capsicum, trimmed and cubed
1 tablespoon grated fresh ginger
500g pork mince
1 medium red chilli, finely chopped, optional
2 cloves garlic, finely chopped
¼ cup hoisin sauce
2 tablespoons soy sauce
¼ cup coriander leaves, roughly chopped
To serve
¼ cup hoisin sauce
1 tablespoon rice wine vinegar
1 medium carrot, peeled and julienned
½ cucumber, julienned
1 spring onion, thinly sliced
¼ cup roasted and salted peanuts, roughly chopped
2 baby cos lettuces or 1 iceberg lettuce, separated into cups
1 sliced Reed avocado
Heat the oil in a large frypan over a low to medium heat. Add the onion, capsicum and ginger and gently fry for 10 minutes until softened, stir regularly.
Add the pork mince, chilli and garlic to the pan and break the pork apart with a wooden spoon. Fry for 3-4 minutes until the pork mince is cooked through.
Add the hoisin and soy sauce and coriander and stir through. Fry for 5 minutes then remove from the heat.
To serve
In a small saucepan, combine the hoisin sauce, vinegar and ¼ cup of water. Stir to combine, bring to a simmer then remove from the heat.
Serve the pork mince alongside the lettuce cups, prepared vegetables, peanuts and hoisin sauce.
