Guacamole w Tortilla Chips

Serve 4

Everyone’s favourite classic guacamole recipe with easy make-at-home tortilla chips to really please a crowd! Enjoy, avo lovers, this one’s especially for you.

The guacamole:
2 ripe avocados, peeled, pitted, and mashed
½ red onion, finely diced
100g cherry tomatoes, quartered
1 fresh red chilli, finely chopped
1 bunch fresh coriander, finely chopped
S & P to taste
1 lime/lemon, juiced
1 tbsp olive oil

The tortilla chips:
12 small corn tortilla sheets
2-3 tbsp olive oil
1 lemon, juiced
1 tsp salt
1 tsp smoked paprika
1 tsp ground oregano

Method

The method:
Pre-heat oven to 180 degrees celsius and line a large baking tray with baking paper

In a small bowl, add in olive oil, lemon juice with salt and stir until well combined

Brush all the corn tortilla sheets with the oil mixture, making sure to cover the entire surface

Stack greased tortilla sheets up and cut into triangles

Arrange tortilla pieces on the baking tray in a single layer (bake in two batches if needed) and bake for 10-12 minutes or until the chips are golden

While corn chips are baking, in a large bowl, combine all the ingredients for the guacamole and mix until combined and keep in the fridge before serving

Remove corn chips from the oven and cool down slightly before handling

Sprinkle smoked paprika and oregano on top of the corn chips and toss gently until chips are well spiced

Garnish guacamole with coriander and chilli and serve up with tortilla chips
