Place the sweetcorn in the microwave and cook for 5 minutes. Slice the ends off then remove the husks.
Bring the barbecue to a medium heat and grill the corn until lightly charred on all sides. Set aside to cool for 5 minutes then use a sharp knife to cut the corn kernels off the cob.
In a bowl, toss together the salad ingredients.
In a food processor, blitz the dressing ingredients except for the chives and salt and pepper. The dressing should be runny enough to drizzle over the salad, if it’s too thick, add a little more water. Once it’s reached the desired consistency, stir through the chives and season to taste.
