Method
Heat the oven to 180ºC fan bake and line an oven tray with baking paper.
In a bowl, whisk together the batter ingredients. In another bowl, mix together the breadcrumbs and salt.
Cut the cauliflower into bite sized florets then dip into the batter, shake off any excess then toss in the crumb. Transfer to the lined baking tray and drizzle with oil. Bake for 20 minutes then turn them over and bake for a further 10-15 or until golden and crunchy.
Coriander & Avocado Dip
Place the ingredients in a food processor with ¼ cup of water. Blitz together until smooth. Add extra water until the dip has reached the desired consistency. Season with salt and pepper.
Quick Pickled Onions
Place the vinegar, water, sugar and salt in a small pot and bring to a simmer. Once the sugar has dissolved, remove from the heat and add the onions. Sit for 15 minutes before eating.
