Crunchy Avo Chips w Jalapeno Mayo

Serves 4-6

Enjoy these crunchy avo chips with jalapeno mayo as a snack while being a much healthier and unique option than regular chips but easily as delicious!

Ingredients
2 ripe but firm avocados
1 cup flour
1 cup milk
1 clove garlic, minced
1 teaspoon ground paprika
½ teaspoon ground turmeric
¼ teaspoon ground cumin
1 tablespoon hot sauce
Sea salt
Cracked pepper
2 cups panko crumbs
Olive oil for baking

Jalapeno Mayo
1 cup mayonnaise
1  clove garlic, minced
1-2 tablespoons chopped pickled jalapenos 

Crunchy Avo Chips w Jalapeno Mayo

Method

Heat the oven to 190ºC and line an oven tray with baking paper. 

Cut the avocados in half and remove the stone and peel. Slice the avocado into thick wedges, roughly 8-12 per avocado. 

In a bowl, whisk together the flour, milk, garlic, spices and hot sauce until smooth. Season with salt and pepper. 

Pour the panko crumbs into a separate bowl. 

Dip the avocado wedges into the batter, make sure they’re completely coated. Drain off any of the excess batter then toss in panko crumbs. Place on the lined oven tray while you coat the rest. 

Sprinkle a little salt over the chips then drizzle with oil. 

Bake in the oven for 30 minutes, turn half way through cooking and drizzling again with oil. 

In a bowl, mix together jalapeno mayo ingredients and serve alongside chips.
