Method
Spiralize your zucchini and set aside in a bowl.
Mash avocado with lemon juice, salt and pesto until you reach a creamy consistency. Adjust salt and pepper to taste.
Mix your dressing through the noodles. Use your hands and pull the noodles through your fingers to ensure the dressing is well mixed and distributed evenly.
Add rocket leaves and chopped radish to a bowl and place your noodles on top. Garnish with pumpkin seeds, sesame seeds, micro-greens and lemon wedges. We also add cracked pepper and chilli flakes.
Optional add in’s; Cherry tomatoes, olives, pine nuts, sundried tomatoes, nutritional yeast.
