Caramelised Onion & Avocado Dip

Serves approx. 6

Caramelised onion & avocado dip is a flavour bomb! Salt and vinegar kettle chips are a great pairing with this dip as they balance out the sweetness from the caramelised onions with the acid of the vinegar and the saltiness. 

Ingredients
1 tablespoon olive oil
25g butter
2 onions, finely diced
3 ripe avocados 
1 tablespoon chopped fresh herbs, parsley, dill and chives
2.5 tablespoons lemon juice
1 clove garlic, minced
Sea salt
Cracked pepper
Salt and vinegar kettle chips to serve

 

Caramelised Onion & Avocado Dip

Method

Heat the oil and butter in a sauté pan over a low heat. Add the finely diced onion and gently fry for 30-45 minutes or until softened and caramelised, stir often. Then set aside to cool. 

Place the avocado flesh in a large bowl and mash with the back of a fork. Add the herbs, lemon juice and garlic then season to taste. Add ⅔ of the caramelised onions and stir to combine. 

Serve the dip topped with the remaining caramelised onions and alongside salt and vinegar kettle chips.
