Avocado, Tomato & Basil Bruschetta

The perfect combination of colour, flavours and texture! Simple yet delicious this Avocado, Tomato & Basil Bruschetta is the perfect starter or snack for summertime.

Serves 4
Prep time: 10 minutes

1 tomato, deseeded and diced
1 garlic clove, minced
1 tbsp balsamic vinegar
3 tbsp olive oil, divided
1 baguette, sliced into 1.5cm thick pieces
1 avocado, sliced into pieces
Handful basil leaves, roughly torn
Salt & pepper, to taste

Preheat oven to 230˚C.

In a small bowl, mix together tomato pieces, minced garlic, balsamic vinegar, 1 tablespoon of olive oil and 1/4 tsp salt and a generous grind of black pepper. Leave to marinate for 10 minutes.

Place baguette pieces on a lined baking tray and brush each piece with olive oil on both sides. Place tray at top of the oven and bake for 5-6 minutes, until baguette pieces are turning golden brown. ‘

Remove toasted baguette from the oven. Top each piece with some tomato mixture, avocado slices and basil leaves, and season with salt and pepper to taste. Serve immediately.
