Method
The Method:
Preheat oven to 200 degrees
In a baking tray, season tofu with cornstarch, half of the combined spices, oil, tomato paste and soy sauce and bake in the oven for 25-30 mins or until the tofu skin is nicely golden and crunchy, toss half way
In a small bowl, mix the remaining tofu steak seasoning and set aside (spices, oil, tomato paste and soy sauce)
In a separate baking tray, season beets with salt, pepper, and oil and bake for 20 mins or until tender
Wash rice and cook rice with water in the rice cooker or on the stove and allow cool down slightly before handling
While tofu & beets are in the oven and rice is cooking, prepare the wasabi avo cream
In a bowl, mash avocado with mayo, wasabi, lemon juice until creamy and season, cover and keep refrigerated before serving
Fluff rice with a wooden spoon and season rice with vinegar, salt and rice seasoning, set aside
Prepare a bowl of cold clean water to prevent rice sticking
Wet both hands and scoop ¼ cooked rice, press firmly and shape into a square rice sandwich and repeat
In a frying pan, shallow fry rice sandwich until both sides golden crispy
Remove tofu and beets from the oven and allow cool down slightly before handling
Brush tofu steak with the remaining seasoning
Prepare lettuce and slice some more fresh avocado
Assemble sushi sandwich with wasabi avo cream, lettuce, tofu steak and avocado slices
