Avocado Protein Brownie

When you’ve got a choccy craving at 5pm but a gym class at 6pm…Protein brownie!! Whip these up and keep handy to satisfy those cravings whilst giving you a good hit of energy to keep you going. Make bulk and freeze them so you can pull one out whenever you feel!

Ingredients:
1 Ripe avocado
1/2 cup cacao powder
1 scoop Two Islands protein
1 cup coconut sugar
1 tablespoon almond butter
2 eggs
1 teaspoon baking powder
1/4 pink himalayan salt (ground)
1 teaspoon vanilla extract
2 Rows of dark chocolate (I used nestle dark cooking choc)

Method

Preheat oven to 180 degrees and line your baking dish.

Scoop out your creamy avocado into a bowl (you only will need one bowl, make sure you remove the pit) and mash that avo with a fork until you can’t mash no more or use a food processor for ultimate creaminess and to get rid of all avocado chunks. I just used a fork.

Combine the mashed avocado, add eggs and stir. Then add cacao powder, protein powder, coconut sugar, almond butter, baking powder, vanilla extract and salt.

Mix, mix, mix. Chop chocolate up into random smallish chunks and add to your mixture.

Pour the mixture into your lined baking dish and place it into the oven for 30 – 45 minutes

Check at 30 – 35 min, if you can put a knife through the middle and it comes out clean it’s PERFECT if not put it in for a little longer.

Let your brownie cool before cutting and serving.
