Serves 3-4
1 cup frozen peas, thawed
1 avocado
3 tablespoons chopped pickled jalapenos
3 tablespoons chopped fresh coriander
2 tablespoons chopped fresh mint
2 tablespoons lime juice
1 clove garlic, crushed
100 grams feta cheese, crumbled
Sea salt
Cracked pepper
To serve
4 slices sourdough
2 tablespoons olive oil
¼ cup finely grated parmesan cheese
1 tablespoons sesame seeds, toasted
In a medium sized bowl, combine the peas and avocado. Use the back of a fork or a potato masher to smash the peas and mash the avocado until a chunky mash forms. Add the jalapenos, herbs, lime juice and garlic and give it a good mix. Fold in the feta cheese then season to taste.
Place the slices of sourdough on an oven tray and drizzle over olive oil. Grill on both sides until golden and toasted.
Place heaped spoonfuls of the mash onto the toast and top with parmesan and sesame seeds.
