Avocado on Kumara Toast

Serves 2

Ingredients:
1 large kumara, sliced lengthways in 1cm slices
1 tbsp olive oil
1 Avocado, thinly sliced
½ cup cherry tomatoes, thinly sliced
2 tbsp hazelnuts, toasted and roughly chopped
Sprinkling of paprika
Salt & pepper, to taste

 

Avocado on Kumara Toast

Method

Preheat oven to 200˚C and line a baking tray. Coat each piece of kumara in olive oil, salt and pepper. Bake for 30 minutes or until cooked through, flipping halfway.

Once cooked, top each kumara toast with sliced avocado and tomato. Top with hazelnuts, paprika and salt and pepper to taste and serve.
