500g kumara, diced 2cm
1 small onion, finely chopped
large clove garlic, finely chopped
100g halloumi, diced 1cm
1 tbsp rose harissa
1 tsp ground coriander
1/2 tsp dried oregano
1/2 tsp salt
15g fresh parsley, chopped, plus extra to garnish
1 tbsp lime juice
4 eggs
1 Avocado, diced

Dressing
1 tablespoon olive oil
1 tsp lime juice
1/2 tsp rose harissa
