Spicy Jalapeño Burger

Serves 4

Ingredients
Guacamole
2 ripe avocados
¼ cup finely chopped coriander
2 tablespoons lime juice
1 tablespoon hot sauce
1 tablespoon finely chopped red onion
Sea salt
Cracked pepper

Patties
500g prime mince
½ small red onion, finely diced
½ teaspoon dried oregano
½ teaspoon dried garlic chips
½ teaspoon smoked paprika
1 tablespoon chipotle sauce
1 tablespoon worcestershire sauce
3 tablespoons tomato sauce
5 pickled jalapeño slices, finely chopped
1 tablespoon olive oil, for frying

To assemble
4 slices cheddar cheese
4 burger buns
1 tablespoon butter, softened
¼ cup mayonnaise
2 tablespoons chipotle sauce
1 clove garlic, crushed
Sliced pickled jalapeños or gherkins
Hot sauce, optional

Guacamole

Place the avocado flesh in a medium sized bowl. Use the back of a fork to mash the avocados. Add the remaining ingredients and stir to combine. Cover and refrigerate until you’re ready to assemble.

Beef Patties

In a bowl, combine the patty ingredients. Divide the mixture into 4 and roll and flatten into patties. Bring a barbecue flat plate or cast-iron pan to a high heat. Add a little olive oil then place the patties on the grill. Use the back of a spatula to push down on the patties so they’re roughly 7mm thick. Fry until browned and crispy then carefully flip them over. Place a slice of cheese on top of each patty and grill for a further few minutes until the cheese has melted. 

To Assemble

Cut the burger buns in half and butter. Place on the grill and lightly toast. 

In a small bowl, mix together the mayonnaise, chipotle and garlic. Smear onto the burger buns and top with patties, guacamole, hot sauce and pickled jalapeños or gherkins.
