Spicy Mango & Avocado Salad

This salad works great as a side with grilled meat or fish or in tacos.

Serves 4

Ingredients
¼ savoy or green cabbage, finely shredded
1 ripe avocado, sliced
1 ripe mango, sliced
2 shallots, finely sliced
1 spring onion, finely sliced
1 handful fresh mint leaves
1 handful fresh basil leaves
1 medium red chilli, sliced
2 tablespoons sesame seeds, toasted


Dressing
¼ cup olive oil
2 tablespoons lime juice
1 tablespoon rice wine vinegar
1 teaspoon sesame oil
1 clove garlic, finely grated
3cm piece of ginger, peeled and grated
Sea salt

Method

Prep the salad ingredients and toast the sesame seeds in a small pan over a medium heat. 

In a large bowl, toss together the salad ingredients. 

In a jar, add the dressing ingredients. Place the lid on top and shake until the dressing has come together and emulsified. 

Toss the dressing through the salad and serve on a serving platter.
