Method
Heat the oil and butter in a sauté pan over a low heat. Add the finely diced onion and gently fry for 30-45 minutes or until softened and caramelised, stir often. Then set aside to cool.
Place the avocado flesh in a large bowl and mash with the back of a fork. Add the herbs, lemon juice and garlic then season to taste. Add ⅔ of the caramelised onions and stir to combine.
Serve the dip topped with the remaining caramelised onions and alongside salt and vinegar kettle chips.
