Method
In a jar, shake together the garlic, rice wine vinegar, caster sugar and chilli oil.
Finely cube the avocado and cucumber and place in a large bowl. Add the dressing and toasted sesame seeds and stir to combine. Season with salt.
Heat 5cm of oil in a small saucepan. Bring the temperature up to 180ºC then gently drop a few wonton wrappers into the hot oil. Fry for 1 minute or until golden and crisp. Remove with a slotted spoon and place on a tray lined with paper towels to drain. Continue with remaining wonton wrappers.
