Method
Heat the oil in a small sauté pan. Add the cumin and mustard seeds and toast briefly until the mustard seeds begin to pop. Remove from the heat and set aside to cool.
Cut the avocados in half and carefully remove the stone. Scoop out the flesh and place in a bowl. Mash the avocados with a fork then add the fried spices and remaining ingredients, reserve a little red onion to sprinkle on top, then mix together. Season with salt and pepper.
To serve, heat the oil in a small sauté pan over a medium heat. Add the curry leaves and fry briefly until crisp. Sprinkle over guacamole with reserved red onion.
