Ingredients
4 ripe avocados
40g feta, crumbled
2 tablespoons chopped pickled jalapeños
¼ cup chopped fresh coriander leaves
1 tablespoon lemon juice
1 tablespoon chopped fresh chives
1 clove garlic, finely chopped
Sea salt
Cracked pepper
To serve
2 tablespoons olive oil
30g pumpkin seeds
Cut the avocados in half, carefully remove the stone and scoop the flesh into a bowl. Use a fork to mash the avocados. Add the remaining ingredients and stir to combine. Season with salt and pepper.
Heat oil in a small sauté pan over a medium heat, add the pumpkin seeds and fry briefly until golden brown. Remove from the heat and set aside to cool then sprinkle over smashed avocado.
