Smashed Avo w Pickled Jalapeños, Feta & Pumpkin Seeds

Serves a group of approx. 6-8. 

This is a deliciously balanced guac recipe which has the creaminess of the cheese and avo mixed with the kick of jalapeños and the crunch of pumpkin seeds. A real crowd pleaser! Enjoy this smashed avo with pickled jalapeños, feta & pumpkin seeds with crisp bread or on toast.

Ingredients
4 ripe avocados
40g feta, crumbled
2 tablespoons chopped pickled jalapeños
¼ cup chopped fresh coriander leaves
1 tablespoon lemon juice
1 tablespoon chopped fresh chives
1 clove garlic, finely chopped
Sea salt
Cracked pepper

To serve
2 tablespoons olive oil
30g pumpkin seeds

Method

Cut the avocados in half, carefully remove the stone and scoop the flesh into a bowl. Use a fork to mash the avocados. Add the remaining ingredients and stir to combine. Season with salt and pepper.

Heat oil in a small sauté pan over a medium heat, add the pumpkin seeds and fry briefly until golden brown. Remove from the heat and set aside to cool then sprinkle over smashed avocado.
