Crunchy Panko Chicken Burgers w Herby Mayo

We can’t remember the last time we were this excited about a burger! Packed full to the brim with flavour and texture, this burger really is an all-round winner. Combining our favourite way to crumb (panko of course) with delicious and juicy chicken thighs paired together with a moreish herby mayo, fresh avo and pickles and finally finished off between the queen of all buns, brioche. This combo gets the biggest YES from us.

Ingredients
Panko Chicken
4 boneless chicken thighs
2 cups panko crumbs
3 size 7 eggs
1 cup plain flour
1 tablespoon hot sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon smoked paprika
Oil for frying

Herby Mayo
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh chives
½ cup mayonnaise
1 tablespoon lemon juice
1 clove garlic, minced
4 large gherkins, finely chopped
Cracked pepper

To Assemble
2 avocados, sliced
1 small cos lettuce, chopped
Sliced gherkins
4 brioche buns
